III Forks

We went out to III Forks last night ‘thank you Toray’. The service was so/so. Cocktails took forever to arrive. We tried to order a second one, but when 20 minutes went by and it still hadn’t arrived we canceled the order. I was impressed with their bread and butter. I’ve never seen such a thin layer of crisp crust before. The bread was easy on salt, but the butter made up for it… just the way I like it. We started out with scallops which we sent back because while the menu said nothing about any sauce being on them, they arrived with some that tasted like BBQ, not to mention they were very rubbery. The replacement crab cakes were much better and almost gave me confidence to order seafood, which is what I wanted, but I thought it best to stick to steak. Their signature III Forks salad was tired as was a lot of their menu. It was the usual field greens, granny smith apples, and pecans in a vinaigrette. I think Panera does a better job of it with their Fuji Apple Chicken Salad. The steak was under cooked, not because they didn’t know how to cook it, but because the waitress didn’t hear us correctly. It was a good piece of meat and we’d rather have a steak undercooked than over. It makes heating up leftovers easier. The veggies were very good, but a restaurant should know how to cook vegetables. For desert Ryan ordered creme brulee. It wasn’t bad, but we’ve had better. I ordered their bread pudding with their home made cinnamon ice cream. The ice cream, sauce and pecans were the best part. I could have done without the bread pudding. It was overcooked. Their hot flame is great for steaks, but they need to tone it down a bit for other things.

Hot Chocolate

A cousin of mine sent this to me and while I’ve heard it before it’s still a good point.

A group of graduates, well established in their careers, were talking at a reunion and decided to go visit their old university professor, now retired.
During their visit, the conversation turned to complaints about stress in their work and lives. Offering his guests hot chocolate, the professor went into the kitchen and returned with a large pot of hot chocolate and an assortment of cups – porcelain, glass, crystal, some plain looking, some expensive, some exquisite – telling them to help themselves to the hot chocolate.
When they all had a cup of hot chocolate in hand, the professor said: “Notice that all the nice looking; expensive cups were taken, leaving behind the plain and cheap ones. While it is normal for you to want only the best for yourselves, that is the source of your problems and stress. The cup that you’re drinking from adds nothing to the quality of the hot chocolate. In most cases it is just more expensive and in some cases even hides what we drink. What all of you really wanted was hot chocolate, not the cup; but you consciously went for the best cups… And then you began eyeing each other’s cups.

Now consider this: Life is the hot chocolate; your job, money and position in society are the cups. They are just tools to hold and contain life. The cup you have does not define, nor change the quality of life you have. Sometimes, by concentrating only on the cup, we fail to enjoy the hot chocolate God has provided us. God makes the hot chocolate, man chooses the cups. The happiest people don’t have the best of everything. They just make the best of everything that they have. Live simply. Love generously. Care deeply. Speak kindly. And enjoy your hot chocolate.

Blackmail

Illianna doesn’t like green foods just yet. They have a strong flavor and when you know there are yummy things out there like peaches and sweet potatoes to eat, who wants to eat their veggies? She does better with green beans than peas, but still makes the funniest faces. It’s hard not to laugh at these faces and I wouldn’t change them for anything. I started to think, one day when she does like green beans and peas, I’m really going to miss this, so I reached for the camera. She is one smart cookie and a big ham. The second the camera came out green beans were no longer this disgusting thing they were just a few seconds ago. Maybe she’s got more sense than to let me take future blackmail photos. Here’s the best I could do.

Mommy Exists

Finally! A photo with me and Illianna together! I’m always taking them so I feel like I don’t exist.

We were supposed to go to a Valentine’s party, but Ryan had to leave the house early today so he didn’t get to play with Illianna in the morning. Since their time is so limited in the first place I thought I’d rather spend Valentine’s with my sweetheart so we went to see Dadda at work.

Ryan: This is my favorite photo yet! They both look so happy and beautiful, I can’t wait to take this picture to work to remind me everyday why I work, and why I rush home.’

phpMyAdmin over SSL

I get asked this question a lot: “How can I force phpMyAdmin to run over https ‘SSL’?” It is basically an issue to deal with security. Since phpMyAdmin deals with directly accessing your database, it only makes sense you want to make it as secure as you can. While running over SSL ‘HTTPS’ is not the total solution, it does help. SAHM

This has been my first week home with Illianna. It is so rewarding to put her to sleep at night and hardly hear a peep of protest out of her because she’s had such a fulfilling day. I’ve been around to take care of all her needs and a couple of her wants ‘hold me, hold me, hold me’. She is one happy baby and I’m one happy Mommy. I feel like a weight has been lifted off my shoulders.

Speaking of shoulders, I can actually feel mine again. They don’t just consist of knots. While I’m still looking forward to our day at the spa we have planned while in Tahoe, it’s not as though I’m just dying for it. It’s as if I’m on a whole new path of self discovery. Take away the corporate world, and some sharp edges dull. They’re not necessary anymore. You come back to your roots. It’s been exciting to watch everyone grow.

I’m so appreciative of all Ryan does to make it possible for me to be at home and run our household properly. We really are so blessed.
